Daily Greens™ New Year’s Cleanse


Appetizer: Raw Cauliflower Soup

Directions:

  • Blend ¼ cup of pine nuts on high speed for 1-2 minutes
  • Add the following and blend until smooth:
      ½ head of cauliflower
      1 cup of water
      1 peeled garlic clove
      ¼ peeled sweet onion
      1-2 tsp. of Italian spice
      2-3 extra virgin olive oil
      Sea salt and pepper (to taste)
  • Add water as needed for desire consistency
  • Garnish with parsley leaves and cracked pepper

 
 
 
 
 
 


 


Dinner: Simple Winter Salad

Directions:

  • Toss the following in a large bowl:
    • 1 chopped head of butter lettuce
      1 shredded carrot
      ½ thinly sliced, peeled cucumber
      2-3 finely chopped green onions
  • For dressing, whisk together:
      1 tbs. whole grain mustard
      1 tbs. raw apple cider vinegar
      2 tbs. extra virgin olive oil
      Sea salt and pepper (to taste)
      Pinch of cayenne

Appetizer: Avocado-Tomato Delight

Directions:

  • Decorate your plate with:
    • 1 thinly sliced avocado
      1 sliced ripe tomato
      Sprinkle of sea salt (to taste)
      Drizzle of extra virgin olive oil

 
 
 
 
 
 
 


 


Dinner: Raw Zucchini Spaghetti

Directions:

  • Mix the following in blender, pulse until smooth:
    • 5-6 ripe tomatoes
      ¼ peeled sweet onion
      2 peeled garlic cloves
      Handful of basil (6-7 leaves)
      Sea salt and pepper (to taste)
  • Spiralize (or shred with peeler) 1-2 small zucchinis
  • Toss “spaghetti” and raw marinara sauce in a bowl

Daily Greens™ New Year’s Cleanse


Appetizer: Sweet Nori Wrap

Directions:

  • Cut 2-3 nori seaweed sheets in thirds
  • Place flat on cutting board – shiny side down
  • Distribute the following evenly between each nori sheet strip:
      1 thinly sliced Fuji apple
      ½ thinly sliced avocado
      ½ cup of thinly sliced carrot sticks
      4-5 ripped basil leaves
      Drizzle of raw agave
      Sea salt (to taste)
  • Wet edge of nori seaweed sheet and roll tightly

 
 
 
 
 
 
 


 

Dinner: Veggie Hand Rolls

Directions:

  • Cut 3 nori seaweed sheets in half
  • Place flat on cutting board – shiny side down
  • Distribute the following evenly between each nori sheet strip:
      6 small heart of romaine leaves – align the tip of leaf with corner piece of nori
      1-2 tbs. raw miso paste
      1 thinly sliced avocado
      ½ cup of thinly sliced carrot sticks
      ½ julienne (or thinly sliced) cucumber
      1 cup of sprouts (any kind)
      Sea salt (to taste)
  • Wet edge of nori seaweed sheet and roll tightly
  • Garnish with 1 inch of peeled and thinly sliced ginger root
  • Dip hand rolls in 1-2 tbs. of raw soy sauce (Nama Shoyu)

Appetizer: Almond Butter Wraps

Directions:

  • Wash + arrange 5-6 romaine lettuce leaves on a plate
  • Inside each place:
      ½ tbs. of raw almond butter
      Drizzle of raw agave
      Carrot and celery sticks
  • Roll into a wrap and enjoy!

 
 
 
 
 
 
 


 


Dinner: Winter Grapefruit Salad

Directions:

  • Toss the following in a large bowl:
  • Inside each place:
      Baby kale leaves
      Handful of watercress (leaves from 3-4 stems)
      Handful of finely chopped basil (10-12 leaves)
      Handful of finely chopped cilantro (2-3 stems)
      ½ thinly sliced bulb of fennel
      1 large (2 small) peeled grapefruit slices
      1 tsp. almond oil
      Sea salt and pepper (to taste)
  • Garnish with 1 thinly sliced avocado
